Heavenly Pasta Experience 

Here's the complete recipe for one dinner for 8 hungry paddlers.  This time we're featuring a pasta dish.


Appetizers:   2 Soups.  Trader Joe's Broccoli and the ever popular, Tomato plus cheddar crackers.  For dessert there were slices of "chocolate orange" and a little firewater.

Ingredients for the Entree: 

16 oz package pasta (we used wheat free to accommodate allergies.

(2) 16 oz cans chopped tomatoes with garlic.

Some Trader Joe's Steak & Chop Grill & Broil Seasoning and a bit of dehydrated garlic.

A pile of chopped broccoli, lightly steamed.

2 handfuls of steamed baby carrots, sliced.

(2) 8 oz. summer sausages, diced.
1 stick of butter 1/2 cup soy milk. One chopped onion


The Entree:  
"Heavenly Pasta Experience". 

Since our dinner was on the fourth night, I decided on summer sausage, because it didn't need refrigeration.  All the other ingredients kept real well until then.
 
First we steamed the carrots and onion together in a small pot, along with the seasonings and garlic.  As they were cooking, in a separate pot we boiled the pasta, and when the pasta had only a few minutes more to cook, we added the broccoli, and when that was ready, drained the pot, and added the two cans of tomatoes, the butter and soy milk, and the steamed onion and carrots.  In this way, we could cook everything at the same time using only two pots.  We used the large cooking pot for the pasta and broccoli, so everything would fit in that and could be served up.  The butter/soy milk mixture came about as a substitute for an alfredo type sauce, since we had a dairy allergy to deal with.
You could use real milk, but refrigeration would have also been a problem.  I like Trader Joe's brand soy milk the best, and we used the "original" type.
