MEAL #3

Squatting Dog Stew 

Here's the complete recipe for one dinner for 8 hungry paddlers.  It includes appetizers, a salad, and a stew entree made from all fresh veggies.  The whole thing was put together on "Potluck" night and made from the leftovers donated by the entire group.
Appetizers:  2 cans smoked oysters, 1 bag LePain Grille Mini Toast, 1 jar cheese spread.

Ingredients the Entree: 

4 Potatoes

4 cups water

2 tsp salt

5 carrots

1 tsp paprika

1 tsp chives
1 onion 1/2 bag sun dried tomatoes 1 tsp parsley
6 mushrooms 1 tbsp olive oil .
1 pound Cheriso sausage

1/2 tsp onion powder

2 packages Trader Joe's Miso Soup 1/2 tsp garlic .

Ingredients the Salad:

2 1/2 Cucumbers 2 Avocados 1 Tomato
1 tbsp Olive Oil Dash of Lemon Pepper  Salad Seasoning (Elegance)


The Salad:    "Kel's Delight".  From the ingredients above (all were leftovers) just chop it all up and serve.  Use any kind of dressing you have left over.
The Entree:  
"Squatting Dog Stew".  Add the water and olive oil to a 6 quart roaster pot and heat to a boil.  Peel and cube potatoes and add potatoes and carrots to the pot first.  Cook for 10 minutes on high heat until a rolling boil and then reduce the heat to medium (simmer).  Add all other ingredients.  Cook until the potatoes and carrots are tender (about 1 hour).
